As of March 1, 2025 it is REQUIRED in the state of Colorado (outside Denver County) that the person in charge (PIC) for all retail food service establishments must be a certified food protection manager (CFPM).
The PIC is someone who has authority to direct and control food preparation and service. They must show proficiency of required information through passing a test from an ACCREDITED program.
There must be a CFPM on site during hours of operation.

The ServSafe® Food Protection Manager Certification exam is accredited by the American National Standards Institute (ANSI)-Conference for Food Protection (CFP).

Colorado Retail Food Establishment Rules and Regulations citation 2-102.12 & 2-102.20 requires that at least one employee, with authority to direct and control food preparation and service, shall be certified by an accredited food safety certification program as of March 1, 2025.
ServSafe® Manager course meets this requirement.
There must be a CFPM (such as ServSafe® certified) employee on premises during business hours.
